Another Mid-eastern treat, this is a beautiful, light, refreshing pudding made with Rose water. It's great for a Sunday brunch.

4 cups Milk, divided (you can use whole, low fat or skim)

1/2 cup Rose Water (available at gourmet food shops or Mid-eastern Market. A satisfactory substitute would be 1/2 cup cold water plus 1 teaspoon pure Vanilla extract)
6 Tbsp. all purpose Flour
4 Tbsp. Granulated Sugar
1 Oz. shelled Pistachio Nuts, ground or chopped

In a small bowl, combine 1 1/2 cup milk & 1/4 cup of Rose water, Flour and Sugar. Mix to a smooth thin paste. In a saucepan over low heat bring remaining Milk to a boil. Add the Rose water, Flour & Sugar mixture. Cook over low heat, stirring constantly until it thickens, about 5 minutes. Remove from heat. Moisten the inside of 8 dessert dishes with remaining Rose water and divide the pudding into dishes to cool. Sprinkle tops with Pistachio nuts. Cover with plastic wrap & refrigerate until chilled (best overnight).

Easter Story Cookies (Resurrection Cookies) (printable version)
I just had these the other evening at a friend's home & she got them from another friend. They're delicious, light & tell the Real Story of Easter. Great to make with your kids!

1 cup whole Pecans
3 Egg whites
1 tsp White Vinegar
1 cup of Sugar
Pinch of Salt
Preheat oven to 300 F

Supplies: zipper baggies, wooden spoon, tape, Bible

Place pecans in a baggie & let kids beat them with the spoon to break into small pieces (Jesus was arrested by Roman soldiers & beaten, John 19:1-3). Put the vinegar into a bowl (Let kids smell the vinegar. Jesus was thirsty upon the cross was given vinegar to drink, John 19:28-30). Add egg whites to bowl with vinegar (Eggs represent life. Jesus gave His life to us, John 10:10-11) Add pinch of salt (let children taste the salt. Salt represents the salty tears shed by Jesus' followers & the bitterness of our own sins, Luke 23:27) Add the sugar. (This is the sweetest part of the story. Jesus died because he loves us. He wants us to know & love Him. Psalm 34:8 & John 3:16) Beat on high speed 12 - 15 minutes or until stiff peaks form. (The white color represents the purity in God's eyes of those whose sins are cleansed by Jesus' death. Isaiah 1:18 & John 3:1-3) Fold in the nuts. Drop by teaspoon onto wax paper covered cookie sheet. (Each mound represents the rocky tomb where Jesus body was laid. Matthew 27:57-60) Put the cookie sheet into the oven, close the door & turn off the heat (oven is OFF). Give each child a piece of tape & seal the oven door (Jesus tomb was sealed by Pontius Pilate, Matthew 27:65-66. John 16:20-22 tells us that His followers would be sad to leave the tomb) Leave the cookies in the oven overnight. The next morning give everyone a cookie. You'll notice that the cookies are hollow. Just like the empty tomb that guarantees us our resurrection & hope for eternal life. (Jesus' followers were amazed to find the tomb empty, Matthew 28:1-9). Happy Easter!
