Skewered Shrimp
(printable version) Shrimp done this way is fast, easy & tasty! If you don't want to skewer them, don't!
1 lb large Shrimp, uncooked, peeled & de-veined Barbecue seasoning, 2
tbsp.--Bad Byron's Seafood Jubilee Olive oil, 1/4 cup
Combine all ingredients in a bowl. Chill for about 1 hour. Depending on skewer size, put 4 - 6 shrimp on each skewer. Set aside. Place a sheet of aluminum foil on the hot grill. Let it heat. Place Shrimp on foil turning them every 2 - 3 minutes. They should be done in under 5 minutes total cooking time. Serve immediately. Will serve about 4 adults.
For a little something different, instead of the Barbecue seasoning, use a mix
of lemon grass, thyme & sesame seeds. Substitute peanut oil for the olive oil.
Tropical Fish
(printable version) Skewered shrimp or fish with chunks of pineapple. Yum!
1 lb. Large or jumbo shrimp, shelled & de-veined 1 lb. Tuna or Swordfish or Halibut steaks cut into large cubes, about 1 inch Pineapple chunks Green Bell Pepper, cut into large chunks Red Onion, cut into large chunks Bad
Byron's Seafood Jubilee 1/2 cup Worcestershire sauce or Teriyaki sauce 1/2 Lime
Let shrimp & fish marinate in Worcestershire or Teriyaki sauce for about 2 hrs. Put fish on skewers, interchanging with fruit & vegetables, until skewer is full. Brush with sauce & place on a hot grill & turn frequently until just cooked, a total of 5 to 7 minutes. When done, drizzle with lime juice & serve immediately.
