Confetti Rice
Barbara found this one! Served cold as a side dish, this is a great summer way to serve rice!
White rice
1/2 Green Pepper
1/2 Red Pepper
1/2 Purple or Orange Pepper
1/2 small Red onion
1 stalk celery
Olive Oil
Salt & Pepper
Oregano or Basil
Prepare rice according to label instructions to make 6 to 8 servings. Set aside. Finely chop the peppers,
onion & celery. Toss with rice. Lightly drizzle olive oil over the mixture, about 3 - 4 tablespoons. Season
with salt, pepper & oregano or basil to taste.
Tastes great with just about anything!
