Mango Chutney
This is one my favorites that I came up with. It's great with fish, poultry or meat. You can even spice
it up & make it a real sweet & sour combination! Your mouth & eyes will have a treat with this
side dish.
1 large ripe Mango, peeled & finely diced
1/2 Red onion, finely chopped 1 large Tomato, finely chopped
1 Green, Orange or Purple Bell Pepper, diced
1 clove Garlic, finely chopped
1 large stalk of celery, chopped
1 or 2 Jalapeno peppers, seeded & finely chopped (optional)
2 tbsp fresh Lime Juice
2 tbsp Olive Oil
1 tsp Cilantro
dash of salt to taste
Combine all ingredients in a bowl. Cover with plastic wrap & refrigerate at least 2 hours.
