Confetti Rice

Barbara found this one! Served cold as a side dish, this is a great summer way to serve rice!
White rice
1/2 Green Pepper
1/2 Red Pepper
1/2 Purple or Orange Pepper
1/2 small Red onion
1 stalk celery
Olive Oil
Salt & Pepper
Oregano or Basil
Prepare rice according to label instructions to make 6 to 8 servings. Set aside. Finely chop the peppers, onion & celery.
Toss with rice. Lightly drizzle olive oil over the mixture, about 3 - 4 tablespoons. Season with salt, pepper & oregano or basil to taste.
Tastes great with just about anything!

Mozzarella & Tomatoes
A classic salad that I really enjoy as a light dinner while sitting at the pool on a warm summer's evening.
Fresh mozzarella cheese
ripe plum tomato
fresh basil
Olive oil
salt & pepper to taste
