Macaroni Salad

This is how I like to make Macaroni Salad!
I like using Cavatappi instead of elbows; they're
bigger & "heavier".
This recipe is a great way to veggies into your
kids' diets during the summer.
1 lb box of Elbow or Cavatappi (spiral
tube shape) Macaroni
1/3 Green Pepper, finely chopped
1/3 Red Pepper, finely chopped
1/2 Onion, finely chopped, your choice
of onion (yellow, Bermuda, etc)
1/2 large Cucumber, finely chopped
1 stalk celery, finely chopped
1/2 cup coarsely shredded Carrot about 1/2 cup of Mayonnaise or Salad
Dressing Pepper to
taste
Cook macaroni until firm (al dente), about 5 minutes.
Don't over-cook. Allow macaroni to fully cool. Blend all ingredients in a large
bowl, tossing lightly. Keep chilled in the refrigerator.
Tastes great with just about anything!
