Frijoles a la Olla
(printable version)
Simple, basic comfort food; plus a dietary staple.
Prep Time: 15 min.
1 Med. Sized Onion chopped into
larger pieces
2 - 6 cloves Garlic, finely chopped
(you decide how much you want!)
1 stalk Celery, finely chopped
2 cans of Black beans (do not drain)
1/2 teaspoon Cumin powder
Cilantro and Salt to Taste
Combine all ingredients in a crock pot or heavy
casserole. Bring to a slow, low simmer. Allow to cook for 3 - 4 hours.
Serve immediately. Top with
Easy Salsa (Pico de Gallo).

Jicama Salad

Crunchy & cool salad. Prep Time: 15 min.
2 large Jicama (tastes like a radish),
chopped into 1/2 inch cubes
1 Large Cucumber, finely chopped, remove seeds
1/2 Onion, finely chopped
1 small can crushed Pineapple, drained or use fresh pineapple
finely chopped
1Tbsp. Lime Juice
Cilantro and Salt to Taste
Combine all ingredients in a bowl. Serve immediately or chill for several hours & allow the flavors to settle in!
